Chili Cheese Appetizers

1 small loaf French bread, thinly sliced
1/4 cup softened butter
1 4-oz. can chopped green chilies
1 clove garlic, minced
1/2 lb. shredded Monterey Jack cheese



Makes about 20 appetizers


Toast one side of the bread slices under the broiler just until golden.
In a small bowl, combine softened butter, green chilies, and garlic.
Spread mixture on the on the untoasted side of each slice of bread.
Top each bread with shredded cheese, making sure you spread enough cheese to all the edges of the bread.
Broil open faced sandwiches, 2-3 inches from the heat source, until sandwiches are browned and puffy.
Serve hot as appetizers.

Pineapple BBQ Ribs

 3 - 4 lbs. pork country style ribs

1 cup prepared or bottled BBQ sauce

1 20-oz. can pineapple slices, drained


Outdoor Grill Method:

Prepare coals about one hour before cooking.
Coals are ready when they are ash gray in color.
Lightly grease grill.
Place ribs, bone side down on the grill.
Grill the ribs, uncovered for 25 minutes turn and grill an additional 25 minutes on other side.
Brush ribs with BBQ sauce; continue barbecuing ribs for an additional 30 minutes or until done, turning and brushing with BBQ sauce every 10 minutes.
Grill pineapple during last 10 minutes turning and brushing with sauce.
Serve ribs with pineapple slices.



Oven Method:

Place ribs on rack of broiler pan; brush with BBQ sauce.
Bake ribs in a 350*F oven for 1 hour and 15 minutes or until done, turning and brushing with sauce every 15 minutes turning and brushing with sauce.
Serve BBQ ribs with pineapple slices.

Potato Chip Cookies

5 cups crushed potato chips
1 cup brown sugar
1 cup white sugar
2 eggs
1/2 cup milk
2 tsp. vanilla
2 cup flower
3 tsp. baking powder
1/2 cup chopped pecans


Combine crushed potato chips with sugar.
Add slightly beaten eggs.
                                                                  Stir in milk and vanilla extract.
Sift together flower and baking powder and blend with above. ^
Add pecans.
Drop by teaspoonsful onto a greased baking sheet, allowing space for spreading.
Bake at 375-degrees for 10 to 15 minutes or until lightly browned.
Makes 5 dozen cookies.

Teriyaki Salmon


 


 

1 3 lb. salmon fillet, cut into 6 serving pieces

½ cup soy sauce

¼ cup Sherry

2 tsp. grated fresh ginger root

1 clove garlic


 


 

Cut salmon fillets in serving pieces and place in a large glass baking dish or casserole dish.

Combine soy sauce, Sherry, grated ginger root and minced garlic.

Pour marinade over salmon fillets.

Allow salmon to marinade for about 30 minutes.

When ready to cook, place fillets on broiler pan rack.

Broil salmon for about 7 minutes on each side, basting fish with marinade once or twice on each side.

Cook salmon until surface is golden brown and fish flakes easily with a fork.

To cook fish outdoors on the grill, follow same instructions but grease grill before putting fillet on.

Be sure coals are ready before cooking.

Coals should be ash gray in color.

Heartburn Remedies

Antacids (Calcium Carbonate) – Effective for occasional use, negative side effects make antacids something you want to avoid using regularly over the long-term.

Apple Cider Vinegar and Heartburn – Apple Cider Vinegar does work, but it offers no special benefit over plain (and less expensive) vinegar for heartburn. The acetic acid in vinegar is what relieves heartburn, and acetic acid is the primary ingredient in all vinegar. Vinegar is one of the best heartburn remedies, no matter what the type.

Baking Soda – Baking soda was replaced by calcium carbonate in over the counter antacids for a reason – too many side effects, especially when consumed regularly. Baking soda is for toothpaste, not for drinking on a daily basis.

Bed Wedge Pillows – Bed wedge pillows are pillows specially designed to reduce acid reflux when sleeping. While they can be effective, we suspect they may lead to spinal trouble after years of use. It is much simpler and cheaper to just elevate your bed than it is to buy a pillow. These pillows do come in handy however when traveling.

Celery and Heartburn – Celery may reduce heartburn simply because it requires a lot of chewing to eat; chewing produces saliva, and saliva is the best heartburn remedy around.

Ionized Alkaline Water – Alkaline water works much in the way that antacids do and may neutralize stomach acid. The problem is neutralizing stomach acid negatively impacts digestion which may lead to more reflux down the road and other digestive problems.

Iodine Supplements – Switching back from your fancy sea salt or adding an iodine supplement to your diet may improve your heartburn over time. This is because there is a strong link between hypothyroidism and acid reflux, and many people in western nations do not get enough iodine in their diets. Iodine is essential for thyroid function.

Milk and Heartburn – Milk acts as a buffer solution and can help neutralize stomach acid, but as mentioned throughout this site neutralization of stomach acid impedes digestion rather than enhances it. Milk also may increase acid reflux in those who are lactose intolerant or allergic to milk proteins.

Mustard and Acid Reflux – Mustard does work for heartburn simply because it contains vinegar. We approve of this home heartburn remedy, and it is especially useful if you can work it into your cooking.

Easy Homemade Cinnamon Rolls

Makes 10-12 rolls
1 loaf of frozen bread dough, thawed

1 cup Western family brown sugar, packed

1/3 cup raisins

1/3 cup coarsely chopped walnuts

1/3 cup softened butter or margarine

Ground cinnamon


 


 

Allow the bread dough to thaw according to the directions on the package.

When dough is soft enough to shape, knead five or six times on a very lightly flower board.

Roll out into rectangles about 6 inches wide and ¼ inch thick.

Spread softened butter all over dough.

Sprinkle ¾ cup of brown sugar, raisins and cinnamon.

Roll up and seal up edges.

Sprinkle remaining brown sugar in the bottom of the 8" or 9" round baking pan.

Slice cinnamon rolls about 1 inch thick and place on sides in pan.

Let rise in a warm place of 30 – 45 minutes.

Bake in a preheated oven on 350 F for 25 – 30 minutes.

Remove from oven while still hot; turn upside-down onto serving plate.

Almond Mushroom Pate “Serve with assorted crackers.”

2 TBSP. butter 1 LB. fresh mushrooms, sliced

1 small onion, sliced

1 clove garlic, minced

1 cup slivered almonds, toasted

2 TBSP. vegetable oil

1/4 TSP. thyme

Salt and pepper to taste

2 TBSP. chopped fresh parsley

2 TBSP. toasted sesame seeds


 


 


 

Melt butter in a large skillet over medium-high heat.

Add mushroom, onion, garlic and sauté until most of the liquid has evaporated.

Remove from heat.

Place almonds in a blender or food processor container; coarsely chop.

Remove 2 tablespoons of chopped nuts and set aside.

Continue chopping, slowly adding oil until mixture is well blended.

Add mushroom mixture, thyme, salt and pepper.

Blend thoroughly.

Stir in remaining nuts.

Mold pate into the shape of a loaf.

Combine chopped parsley and sesame seeds; sprinkle over pate.

Serve on a serving dish surrounded with a variety of crackers.
